Sourdough Starter Discard Recipe: Indian style savoury pancakes (dosa).
Ingredients
- 300 gm Sourdough Discard
- Pinch of salt (say 0.5 – 1.0 gm)
- Finely chopped onion
- Finely chopped green chillies
- Finely chopped green coriander (say two tablespoons)
- Optional: Roasted cumin seeds 1/2 teaspoon.
Process
Combine all the above as a viscous flowing batter. Add a bit of water if too thick. If too runny, add a bit of any wheat flour and whisk. Stir well.
Take a griddle preferably flat i.e one where the batter would stay put instead of flowing towards the center (Indians call it a Tawa), either a well seasoned cast iron one or a non stick one. Once the tawa is hot, pour the mixed batter with a ladle and gently spread into a circle. Drizzle a few drops of any cooking oil around the edges. Give it a couple of minutes on one side and then flip it over. Let the other side also brown gently for say two minutes.
Serve as a dosa (pancake) with any sauce / ketchup / salsa / Indian style chutneys etc.
