lrish Soda Bread with Sourdough Starter Discard

Traditional Irish soda bread is made with buttermilk. Over the years I have developed this recipe that uses my sourdough starter discard instead of buttermilk. The starter discard is acidic, which creates the chemical reaction that produces carbon dioxide that creates the rise. The starter is sour like buttermilk, so it adds a similar flavor to the bread. Starter, however, is not dairy, so I use milk as the liquid.
Ingredients
All measures in grams, baker’s percentage in parenthesis
Flour 280 (100%)
Milk 200 (71%)
Starter 360 (129%)
Baking Soda 4 (1%)
Salt 3 (1%)
Process
- Heat oven to 450 degrees Fahrenheit
- Sift the dry ingredients
- Add the milk and starter
- Turn out onto the counter and knead briefly
- Shape into a round about an inch and a half thick
- Place on oiled cooking sheet
- Bake at 450 degrees Fahrenheit for 15 minutes
- Reduce heat to 400 degrees Fahrenheit and bake another 30 minutes
